On the Table: Individual Peach Oatmeal

The other day I had a peach that was in a use it or lose it situation.  I wanted to use it for a dessert, but the end result actually seemed like it would be better suited to breakfast.  I still believe it could work for dessert, but you would probably need to add more sugar to it - and top it with ice cream!!  As it is written here, it would be adorable as little individual-sized oatmeal snacks at brunch.  To prepare:

Preheat oven to 300 degrees.

Cut up the peach and put it into the bottom of a ramekin (one decent-sized peach actually fits into two ramekins).  Next time, I would cut these pieces smaller.


Cover the peaches with milk.  If you have cream, that would be even better!


Add in a drop of vanilla, pinch of salt, and a mega-pinch of brown sugar (or more, if you want it sweeter).


Now, cover the whole thing with old fashioned oats.  You want to make sure that all the oats can get just barely submerged in the milk.


Bake in the preheated oven for thirty minutes.


I splashed in a little bit more milk while I was eating it (cream would be great, ice cream would be better!).
