On the Table: Breakfast Burri-dog

I try really hard not to let food go to waste, which sometimes leads to new and exciting flavor combinations, and often produces a twist on an old favorite.  Take hot dog buns for example.  Unless you have a big family (or a party), it's pretty hard to use up the eight hot dog buns in a standard package (at least, use them up with hot dogs in them) before they get stale.  Therefore, hot dog buns around here often get repurposed as part of other dishes (it doesn't hurt that pretty much everything tastes great on a toasted hot dog bun).  Yesterday, they became part of just the most delicious breakfast quasi-burrito I think I have ever made.  Plus, it only got ONE pan dirty!  To prepare (the quantities provided made three sandwiches):

Cook up some bacon.  You only need one piece per sandwich, but I made everything that was left in the package (you can never have too much bacon!).  Start the bacon in a cold pan and cook it over medium heat, and a lot of the fat will render out of the bacon.  When the bacon is done, transfer it to a paper towel-covered plate.



While the bacon is cooking, dice up half a small white onion and beat three eggs.



You are going to cook the eggs (and onions) in the bacon fat, so when the bacon is done, don't throw the pan in the sink!  You need enough fat just to coat the bottom of the pan, so you can throw any excess away (or save it for later! - if you are going to do that, run it through a fine mesh strainer and into a small container).


You can't really see it, but there is a thin coating of fat in the pan!  And those little brown bits are going to taste just delish in the eggs.

Keep the pan over medium heat and add in the onions.  Cook until they start to brown.


When they start to brown, add in the eggs.


Cook the eggs just like scrambled eggs.  When they are almost set, stir in a small handful of shredded cheddar cheese.


While the eggs are finishing up, toast up a hot dog bun!


You're all set to assemble!  Put half a piece of bacon on each side...


...then load up the middle with eggs...


...and top it however you want!  Great topping ideas: salsa, sour cream + salsa (less photogenic, but even more delicious!), and sriracha (sorry, no picture of that one).
