On the Table: Breakfast Burritos

What is better than breakfast for dinner??  Nothing, that's what.  And breakfast burritos are the perfect combination of breakfast and dinner fare.  I made some for dinner tonight, and they were fantastically delicious.  Sadly, apparently I polished off the sour cream last week (I could eat sour cream with a spoon.  Literally), so I did not have that available as a condiment, but the burritos were pretty fab even without it!  I made a pretty simple version, but you could definitely throw in some beans, rice, and/or other vegetables for a heartier meal.  To prepare (produces enough filling for three burritos):

Dice half an onion and half a green bell pepper (or the color of your choice).


Put a saute pan over medium heat, and thinly coat the bottom of the pan with canola oil.  When the oil gets hot, add in the onions, then the peppers.  Cook, stirring, until the vegetables begin to get translucent.
 

 Put four eggs in a bowl.



Beat them up with a fork.

Add the eggs to the pan, along with a hearty dash of salt.


Cook, stirring, until the eggs are just set (like you are making scrambled eggs).  Stir in a teaspoon and a half of sriracha (or more, if you want a SPICY breakfast burrito) and half a cup of grated cheddar cheese.


Load the filling into a nice warm burrito!


Serve with salsa (and sour cream if you have it!!).
