One of my favorite summer treats is a simple tomato and cucumber salad. It is super easy to make, and it really highlights the flavors of the summer. I was intrigued to find tiny cucumbers at the farmers' market this week - it is a regular cucumber, but apparently the fact that the summer has been really dry means that cucumbers did not get very big. Too cute! To prepare:
Cut up one small cucumber (peel it first if you want - I decided against doing so) and half a pint of cherry tomatoes (these amounts make a hearty individual-sized salad or a side salad for two).
Combine the cucumbers and tomatoes in a mixing bowl, sprinkle with balsamic vinegar, garlic salt, and freshly ground black pepper, and stir well. This salad gets even better if you let it sit for a little while, so feel free to make it ahead of time and just leave it in the refrigerator.
